The rooster rolls

(2-3 portions)

  • Well cooked chicken breast
  • 1 green apple
  • 1 celery branch
  • ¼ cup of Sultana Raisins (cover in cold water for 10 minutes)
  • Mayonnaise
  • Basil leaf
  • Salt and pepper
  1. Pan fry the chicken with a little bit of olive oil and let it cool down for 30 minutes;
  2. When cold, dice the chicken and put the cubes in a bowl;
  3. Dice the apple;
  4. Slice the celery in ¼ inch bits (keeping the leaves is up to you);
  5. Add salt and pepper to taste;
  6. Add 3 to 4 leaves of basil (cutting is to taste);
  7. Drain the raisins and add them to the mix;
  8. Add two tablespoons of mayonnaise and mix well;
  9. Spread the mix on your rolls.
